fresh vegetable recipes???

I have picky children that at times can be difficult in motivating them to eat vegetables. Any fresh vegetable recipes out there that are well liked by children? They can be side dishes or casseroles or whatever as long as the vegetables are bought fresh and not canned. Thanks!

  1. Try making candied carrots, or fried zucchini, and when I was little I LOVED corn on the cob and broccoli and bustle sprouts with Velveeta cheese. Slowly add less cheese, breading and sugar to get them to eat them plain eventually. Candied Carrots INGREDIENTS 1 pound carrots, cut into 2 inch pieces 2 tablespoons butter, diced 1/4 cup packed brown sugar 1 pinch salt 1 pinch ground black pepper DIRECTIONS Place carrots in a pot of salted water. Bring water to a boil, reduce heat to a high simmer and cook about 20 to 30 minutes. Do not cook the carrots to a mushy stage! Drain the carrots, reduce the heat to its lowest possible setting and return the carrots to the pan. Stir in butter, brown sugar, salt and pepper. Cook for about 3 to 5 minutes, until sugar is bubbly. Serve hot! Fried Zucchini<b> INGREDIENTS 2 zucchini, quartered and sliced 1 onion, sliced into rings 1/2 cup all-purpose flour 1/2 cup cornmeal 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1/4 teaspoon garlic powder 1 cup vegetable oil for frying DIRECTIONS Place zucchini and onions in a medium bowl and mix together. In a small bowl mix flour, cornmeal, salt, pepper and garlic powder. Pour dry mixture over zucchini/onion mixture, cover bowl and shake well. Let mixture sit for about 30 minutes; a batter will form on the vegetables. In a medium skillet heat oil over medium heat. When oil is hot add breaded vegetables and fry, turning to brown evenly.
  2. cover them with cheese :P, hide them in burgers and meatloaf( chopped up fine), or try serving them with a dip.. most kids love carrots and celery sticks with ranch dressing. my son used to love corn on the cob wrapped in bacon and grilled.. pull the husks down.. remove the silk.. soak the ears in cold water for about 30 minutes.. wrap a slice of bacon around the ear, pull up the husk and tie with string, and grill about 30 minutes... sooo yummy :)

  4. Maybe they would eat these Vegetable Kabobs Easy grilled skewered veggies, made with zucchini, mushrooms, cherry tomatoes, and pineapple. INGREDIENTS: 1/2 pound whole small mushrooms 1 1/2 pounds small zucchini, cut into 1-inch slices 12 to 16 cherry tomatoes Italian salad dressing or other marinade mixture 9 to 12 pineapple chunks PREPARATION: Directions for grilled vegetable kabobs Wash mushrooms; remove and discard stems. Place mushrooms, sliced zucchini, and cherry tomatoes in salad dressing. Let marinate in refrigerator for at least 4 hours. Drain vegetables, reserving marinade. Thread vegetables alternately with pineapple onto skewers. Cook on grill over medium heat for about 10 minutes, turning occasionally and basting with reserved marinade. Vegetable kabobs serves 4 to 6.
  5. my mom used this recipe with us when we were kids you can boil the veggies and add their fav spices and toos it for a while in a lil oilve oil. add cheese cubes. roll it in a puff pastry and bake still love them
  6. Crockpot Baked Potatoes INGREDIENTS: * 12 potatoes, more or less * foil for wrapping potatoes PREPARATION: Prick potatoes with fork and wrap each potato in foil. Fill dry crockpot with the wrapped potatoes. Cover and cook on LOW 8 to 10 hours, until potatoes are tender. Prick with a fork to check.

Country Club Squash Casserole Ingredients 6 or 8 tender small yellow squash salt to taste 2 tablespoons margarine or butter 1 tablespoon grated onion 1 egg, well beaten 1 cup sour cream 1/2 cup bread crumbs 1/2 cup shredded cheddar cheese dash of paprika Directions Cook squash until tender. Mash and add salt, butter and onion. Add well beaten egg and sour cream. Pour into 1 quart casserole dish. Combine bread crumbs, shredded cheese and paprika. Sprinkle over top of squash and bake for 30 minutes at 350 degrees
  8. my dad fries fresh greenbeans in a pan with lemon and lime juice as well as salt and pepper. it sounds strange but it tastes delicious. ive been eating them since i was 8 or something so your kids will probably like them
  9. Do you have to cook them??? Try to get them to eat them fresh. Give them carrots, green peppers, cucumbers, beans, peas in the pod that they can take out. My children were very picky but when I gave them fresh veggies rather than cooked (which ) are better for them, they got to like some of them better. They also liked frozen veggies better than canned. Like corn and peas.
