interesting vegetable recipes?

Hi Everyone Does anyone have any interesting and filling recipes containing plenty of vegetables? I'm trying to improve my vegetable intake and avoid dairy and bread and pastry etc Any suggestions you have to make something really tasty and filling with vegetables would be great!

  2. I like to fry them up in a pan, any veggies you like. But I usually melt a piece of cheese, and put it in a wrap. To use no dairy or bread that is tough. Good luck.
  3. Try white cabbage, green cabbage, swede, carrots, red onions. Grate finely, top with probiotic yoghurt or creme fraiche and a little virgin olive oil, season with a little salt and freshly ground black pepper. I suppose you'd call it a variation on traditional coleslaw. This is from the top of my head.

  5. Roasted vegetables are delicious and quick: try a combination of the ones you like such as onions, asparagus, tomatoes, pre-cooked potato cubes and fresh corn, cut off the cob. Drizzle it with olive oil and a little salt and pepper...roast at 425 degrees Fahrenheit until the vegs are tender, but not mushy...about 15 minutes. They're delicious as a side dish, wrapped into a flour tortilla for a meal, marinated in a little Italian dressing for a cold salad or used as an omelet filling. EDIT: I precook my potatoes in the microwave...depending on the wattage, the average is one minute per medium-sized potato. You can use whatever veggies you like best, but some root veggies like carrots, parsnips and turnips need a little precooking just like the potatoes or they won't be done when the other veggies are done.
  6. I love to make a big dish of garlic roasted vegies in the oven. I use (Australian names used) Zucchini, Squash, Pumpkin, Carrot, Onion cut in wedges, anything similar you could think of, all cut in large chunks and mix up some crushed garlic in about a cup and a half of water and pour over vegies and bake at least an hour or until cooked. Simple but tasty. A one-dish vegie feast .
  7. try some soups, for example you could do a minestrone with any veg you like and thats filling. Add your favourite veg or for example: cannelini beans, grean beans, cauliflower, cabbage, peas, carrots add some stock and cook. add pearl barley, small pasta or rice into it for a filling meal! Or a potato and leek. Courgette soup. Red pepper, lentil and potato is also good. Try putting some chopped tomatoes in a pan, add some garlic, green beans and copped potatoes add some water and simmer till cooked. (keep adding water if it drys out too much!) When making a mash add swede, carrots and courgettes. this is tasty.
  8. Diced onions, mushrooms, courgettes, peppers, garlic, mushrooms etc any veg you like cooked with some tinned tomatoes, eat as a chunky soup or liquidise for a soother soup. This can also be served as a pasta sauce or with added chicken served on a bed of rice. Mince with onions, mushrooms, garlic, peas and carrots served with dumplings (very filling) Fry some onions, garlic, carrots, celery, courgette etc. in a casserole dish, add a pork chop and some tomatoes(tinned or fresh) add a small amount of water and cook on the hob until the sauce has reduced - serve with rice or boiled potatoes.
  9. take one zucchini and one yellow crook neck squash trim off ends then cut length wise,toss with slices of one red onion. place in a container...and completely cover with a balsamic vinaigrette or a vinaigrette of your choice.and store in fridge. the slices can be grilled or cooked as you wish...and they keep well and improve with age.
  10. The best...the tastiest....the quickest.....and because of all these things...you will keep trying it again and again... Slice red onions...differnt colour peppers....mushrooms, mange-toute....cherry tomatoes....courgettes....and crushed garlic... Place in large bowl..add a little olive oil and coat till everything is glazed.....then tip out onto baking tray. Place in the oven for around twenty minutes (depending on setting). LOVELY!!!!!!
  11. you can easily take most of the veggies listed above , marinate them in a few various things such as wine or seasoned olive oil , or just plain season them . stir fry or grill on kabobs , maybe add some shrimp or scallops , quite good

Curried Vegetables Recipe Ingredients 2 carrots, thickly sliced 2 potatoes, in small chunks 1 salt 2 cup cauliflower florets 1 tbsp vegetable oil 2 onions, chopped 1 tsp curry powder 1 tsp ground cumin 1 tsp turmeric 1 tsp mustard seeds 1/2 tsp hot pepper flakes 1/4 tsp cinnamon 19 oz canned tomatoes, chopped Directions Substitutions: zucchini, sweet potatoes and celery. Cook firmer vegetables first. Place carrots and potatoes in saucepan. cover with water and sprinkle with 1 ts salt. Bring to boil; cover and cook for 5 minutes. Add cauliflower; cook for 5 minutes. Drain and set aside. In large heavy-bottomed saucepan, heat oil over medium heat; cook onions, stirring, for 3-4 minutes or until softened. Stir in curry powder, cumin, turmeric, mustard seeds, hot pepper flakes, cinnamon and 1/2 ts salt; cook for 1 minute or until mustard seeds begin to pop. Stir in tomatoes and 1/2 cup water, scraping up brown bits. Bring to boil. Stir in cauliflower, carrots and potatoes. Reduce heat to medium-low; cover and simmer for 5 minutes. Taste and adjust seasoning.
