Fresh Vegetable Recipes

Anyone have any creative low-calorie vegetable recipes?

I've found a few to try on different recipe sites but I'm looking for your tried and true recipes that even anti-vegetable men (ie: my husband) will like. Not too many ingredients please. Most vegetables are expensive here so I don't want to waste any with untried recipes. Thanks

  1. My husband's favorite vegetable is summer squash. I get a couple each of zucchini and yellow crookneck, and cut them into slices and put in a casserole dish. Sprinkle with some Tony Chachere's Creole Seasoning (seasoned salt or garlic salt will work too) and chopped fresh cilantro OR oregano (do NOT add water). Cover and microwave about 4-5 min. Take out, stir, add a little butter - put back in another 3-4 min. or so...... Simple to do, healthy & you can vary the seasoning to whatever you like - or whatever summer squash is on sale. I've added onions and/or red bell peppers sometimes too

Anything in the cabbage family (kale, cabbage, brussels sprouts) can be braised with a little prosciutto ham and a splash of chicken broth, and sprinkled with parmsesan cheese for a hearty dish that'll curl your toes. Another easy thing is spaghetti squash. Cut it in half and roast it in the oven, then use a fork to pull out the stringy meat. You can season this with butter, or marinara sauce, or a sauce of butter, lemon juice, capers, chopped tomatoes, and peppers. Parsnips are a root vegetable, but when cooked they have a texture a lot like potatoes. Cut them up and roast them among some red potatoes and serve together.

Quick & Easy Green Bean Fancy Ingredients: * 2 cans French or Italian style green beans, drained * 2 tbsp margarine or butter * 1/4 medium yellow pepper, chopped * 1/4 medium onion, minced * 1 tbsp chopped garlic * 1 small can sliced mushrooms, drained * Handful grape tomatoes, halved * Salt * Fresh ground black pepper * 4 tbsp Italian dressing or balsamic vinegar dressing * Fresh grated or shredded Parmesan cheese * Method Place all ingredients, except cheese, in a stovetop pot and simmer on med/low heat with lid about 15 minutes. Remove lid and cook 5 minutes longer to allow water to reduce. Transfer to serving dish, and garnish with fresh grated parmesan cheese. Green Bean and Mushroom Medley 105 calories per serving, serves 3 INGREDIENTS: 1/4 pound fresh green beans, cut into 1-inch lengths 1 carrots, cut into thick strips 2 tablespoons butter 1/2 onion, sliced 1/4 pound fresh mushrooms, sliced 1/2 teaspoon salt 1/4 teaspoon seasoned salt 1/8 teaspoon garlic salt 1/8 teaspoon white pepper DIRECTIONS: 1. Place green beans and carrots in 1 inch of boiling water. Cover, and cook until tender but still firm. Drain. 2. Melt butter in a large skillet over medium heat. Saute onions and mushrooms until almost tender. Reduce heat, cover, and simmer 3 minutes. Stir in green beans, carrots, salt, seasoned salt, garlic salt, and white pepper. Cover, and cook for 5 minutes over medium heat Baby Carrots with Dill Butter 46 calories per serving INGREDIENTS: 1 (16 ounce) package baby carrots 2 tablespoons margarine 1 tablespoon chopped fresh dill 1 tablespoon fresh lemon juice 1/4 teaspoon salt 1/8 teaspoon freshly ground black pepper DIRECTIONS: 1. Place carrots in a saucepan with enough water to cover. Bring to a boil, and cook 10 minutes, until tender. Remove from heat, and drain. Gently toss with margarine, dill, and lemon juice. Season with salt and pepper.

I have a ton of zucchini in my garden right now, so I've just been slicing them into medallions, steaming them for 3-4 minutes and then covering them with heated marinara sauce and a sprinkling of Parmesan cheese. Yum! Also, you can steam broccoli, asparagus, or artichokes and dip them in a mixtures of mayonnaise, crushed garlic, and lemon juice. The garlic makes anything taste good! Have you tried basic salads? You can make them look good to your husband by topping some organic mixed greens with cold, sliced steak, bleu cheese, bacon bits, or croutons. You could also try making a traditional spinach salad with bacon, hardboiled eggs, and a rich dressing. Good luck!
