Vegetarians please help me, I need some of your excellent recipes?
Two of my husbands family members are vegetarians. He invited them to the party and I just don't know what to prepare. Please, I appreciate your help. Thankyou. Something to have at a BBQ. Could be any thing and I will sort them out.

- Veggie lasagna is always good. Just make a red sauce with all veggies like zucchini, spinach, carrots, different colored peppers, celery, onion, tomato, and mushrooms. Baked eggplant is always good. Hummus with pita bread. Veggie burgers. All veggie stir fry. Veggie curry. Spinach salad (spinach, red onion, walnuts, cranberries, blue cheese, with peanut style vinaigrette) Pretty much anything you cook with meat, just leave out the meat and add sturdy veggies in it's place. Find out if they are vegan, if they are no cheese.
- Grilled Summer Squash,Eggplant w/Cinnamon-Chipotle Butter Recipe By : Annie Sommerville in "Fields of Greens" Serving Size : 3 Preparation Time :0:15 Categories : Grilled/Smoked , Two Thumbs Up Amount Measure Ingredient -- Preparation Method 2 pounds small summer squash (crookneck, zucchini) -- halved lengthwise -- in thirds if thick 4 small Japanese eggplant (about 1 pound) -- cut in thirds -- lengthwise 3/4 cup Cinnamon-Chipotle Butter -- recipe to follow VERY VERY lightly spray the cut sides of the vegetables with cooking spray (I like to use butter-flavored PAM for this). Lightly spray a clean grill with cooking spray, then get it very hot, preferrably using mesquite charcoal or mesquite chips. Grill the vegetables cut-side down over high heat until they are done but only blackened in rare spots, about 5 or 6 minutes. For pieces with two cut sides, turn them once halfway through. (If you want you can watch them carefully and turn them 90 degrees partway through to get nice crosshatch grill marks). Brush the cut side of each piece generously with the Cinnamon-Chipotle Butter and serve hot or warm. The Easiest Grilled Corn - This is almost a cop-out, but when you want corn, and you hate prep, this recipe is perfect. Simply remove the husk from the cob and wrap the puppy in tin/aluminum foil. Grill for about 15 minutes; but of course that depends upon how hot the coals are. If you want to spice it a bit, rub the corn with butter and pepper prior to putting it on the grill - thus allowing the grill to be cooked a bit by the butter. Grilled Corn au Naturel - This is wonderful and also very easy, the result is something you don't encounter in the states very often. In fact the first time I had it was when my wife and I went to Oaxaca... but that is another story. In any event, remove the husk from the cob and place the corn on the grill. Don't be afraid to let parts of the corn get dark brown or even black. Cook for 8-14 minutes until golden brown. When you are done, dress the corn as you might normally: with butter. Or for a slightly different experience - slice a lime and rub the lime over the cob, then sprinkle chile powder Grilled Corn in the Husk - This is my favorite, but is one of the more annoying to prepare... but it is well worth it. First, carefully peel back each leaf of the husk - don't be too hasty and break or crack the husk! When the husk has been peeled back, remove the silk. Then rub melted butter all over the cob, and then one-by-one, "unpeel" the husk leaf-by-leaf. Tie the husk at the top of the corn with a string, and soak the cob in water (or better yet: MILK) for about 30 minutes. This is done so that the husk will not catch fire. Then place on the grill for about 15 minutes, or until cooked. Then enjoy. Eggplant Burgers INGREDIENTS: * 1 eggplant, peeled and sliced into 3/4 inch rounds * 1 tablespoon margarine * 6 slices Monterey Jack cheese * 6 hamburger buns, split * 6 leaves lettuce * 6 slices tomato * 1/2 onion, sliced * 1/2 cup dill pickle slices * 1 (20 ounce) bottle ketchup * 3 tablespoons mayonnaise * 2 tablespoons prepared yellow mustard DIRECTIONS: 1. Place the eggplant slices on a plate, and cook in the microwave for about 5 minutes, or until the centers are cooked. 2. Melt margarine in a large skillet over medium-high heat. Fry eggplant slices until lightly toasted on each side, and place one slice of cheese onto each one. Cook until cheese has melted, and remove from the skillet. 3. Place eggplant on hamburger buns, and allow each person to top with lettuce, tomato, onion, and pickles, and dress with ketchup, mayonnaise and mustard.

SO YUMMY! Eggplant steak are great too : 2 eggplant sliced into diagonally 1 inch slices 1)4 cup of olive oil grated zest of 1 lemon 2 tbsp thyme leaves put everything into a bolw ensre is well coated then cook on each side for approx. 5 min utnil lighlty barred and very soft.
