Are there any lists out there that tell which fresh vegetables and fruit can be easily frozen ?

- Yes Go th the library try canning and preserving..
- As a rule of thumb, I don't freeze fresh vegetables and fruit. Its much cheaper to buy less, and use up items in the fridge as necessary.
- I freeze everything, except lettuce. All fruits can be froze, just sprinkle some fruit fresh on it so it don't turn brown. You can find it in the canning section of your store. Veggies, I just put then in the bag and try to get as much air out as I can and seal and freeze.
- All fruit can be frozen..berries work the best. I lay my berries in a single layer on a cookie sheet until frozen, then place in ziplock bags. Peaches and mangoes should be sliced first. Bananas..just peel them first, and cut in half or thirds. When it comes to veggies, many need to be blanched. Cut into pieces you'd normally serve them in first. Here's a great website that gives you instructions on what veggies freeze well, and a huge list of blanching times for different veggies... http://www.ext.vt.edu/pubs/foods/348-596/348-596.html
