What is a healthy vegetable recipe?
I need a vegetable"Medley", whether steamed or sauteed that I could reheat throughout the week. I work about 80 hour weeks and have little time to cook. Please give complete recipes... Great answers so far... just one problem I am allergic to onions.

- If you reheat steamed or sauteed veggies a lot of times they will get very soggy and they also loose all their nutrients. I buy a medley of veggies, cut them the size I want, wash them and place portions into microwavable bags. You can keep the bags in the crisper of your fridge for longer then a week. When I come home at night, I just heat them for 2 or 3 minutes in the Micro (in that bag) take them out, add seasoning and sometimes a little butter. .
- Saute 1 large chopped onion in a little oil. Add 1 clove crushed garlic and 1 tsp of ginger. Chop your veggies into bites sizes and add to the saucepan and cook for a few minute. Add 1 can of crushed tomatoes, salt, pepper, 1 tbs of curry powder and 1 tbs of sweet chili sauce. Cook until veggies are tender. We have ours with rice and sometimes we even have it with cooked pasta shells. Enjoy
- HEALTHY VEGETABLE DISH 1 onion, chopped 2-3 garlic cloves, chopped 1 tsp. sugar 4 c. water 1/2 c. lentils 1/2 c. barley pearls 1/2 c. brown rice 1/2 c. dried apricots, chopped 1/2 c. raisins 1 1/2 tsp. dry mint flakes Pepper, lightly salt Saute onion and garlic in olive oil for 2 minutes. Add sugar, water and lentils and cook 20 minutes. Add remaining ingredients. Cover with lid making a good seal to keep in steam. Simmer for 20 minutes. Serve.
