which fresh vegetables can be succesfuly frozen?

  1. carrots, peas, corn, beets, brocolli.
  2. They can all be frozen successfully if you blanch them first.
  3. Any thing firm but some things need to be blanched [dipped in boiling water] you can not do soft veg like cucumber
  4. Tomatoes, peas, zucchini, other squash, corn, beans, cabbage. Keep in mind that the higher the water content, the mushier the veggie after thawing (like spinach). That isn't an issue if using in recipes that will be baked or put in soups, though. And many of them are better if "blanched" (dipped in boiling water) and peeled first. Good luck!
  5. Pretty much anything. You should try to get as much water out as possible. Put some salt in the freezer bag(if you don't mind a little seasoning) to limit the formation of ice crystals. Don't expect to get out what you put in. Frozen is best when you plan to use the vegatables for cooking. The frozen vegetables at the grocery store are pretty good as well. In fact, frozen peas are better than fresh in my opinion. Same favor and alot less work.
