Are fresh vegetables better for you than cooked?

In other words, should I be eating fress carrots or green beans for dinner instead of cooked? What about canned veggies? Are they as good as fresh?

  1. the longer you cook vegetable the more vitamins and nutrients you lose. If you lightly steam or blanche them, you will retain most of it though!
  2. OFF COURSE During cooking certain nutrients are drained off so it is better if the vegetables like carrot,raddish etc are eaten as salads,but please ensure that these are washed thoroughly with water having salad wash tablets added to it as prescribed to bring down the microbial contamination to the safe limit and also these should be free from pesticide residues.
  3. yes more nutrients and good for teeth and gums
