Vegetable recipes for veggie-haters?

Got any recipes that make even the most die-hard veggie haters say ""mmm..yummy" ?? Non-dairy please : )

  2. You can sneak spinach, zucchini, or other vegetables into the batter if you are making a chocolate cake. It's probably not the healthiest way to serve veggies, but it's a healthy way to serve chocolate cake. You can use a food processor to finely chop various types of hard vegetables that can be eaten raw...preferably colorful ones like carrots, red cabbage, bell peppers, brocolli, etc. Mix them up and call it edible confetti. If they don't really hate veggies, but just find them boring, this may get them to have more fun eating them and therefore enjoy them more.

Marinated Grilled Veggie S/W Ingredients +Bread (any kind, the one you prefer most, but Ciabatta or Focaccia is recommended) +Capsicum (red, green, white), lose the seeds, sliced +Zucchini, sliced +Onion, cleaned and sliced thinly +Balsamic Vinegar +Olive oil +Rock Salt +Ground black and white pepper +Chopped Oregano flake Cooking Method 1.marinate all the veggie (except the onions) in the balsamic vinegar and olive oil, season to taste with the salt and pepper. store in fridge for +/- 1 hour. (Do not overuse the vinegar and salt, as the taste will get stronger over time, take approx 3:1 as to olive oil:balsamic vinegar) 2.heat up your griller, make sure it is not sticky 3.take out the veggies onto the griller, grill until hatchmarks appears. grill both sides. do the same to the onions. spread the chopped oregano flakes over all of them during this time. this will give a particularly good smell 4.Halve the bread, toast till crispy inside 5. arrange grilled veggie inside the bread (just like sandwich) 6.Serve with deep-fried sweet potato or french fries

"Creamy Broccoli and Cheese" - 4 servings 1 (1 oz,) packet Hidden Valley Original Ranch Dressing Mix 8 oz. cream cheese 3/4 cup milk 1 lb. broccoli; cooked and drained 1/2 cup shredded Cheddar cheese In blender container, combine dressing mix, cream cheese and milk. Pour over broccoli in 9" baking dish; stir well and top with cheese. Bake at 350* - 25 minutes or until cheese is melted.

Place vegetables in skillet sprayed with cooking spray; cook on medium heat 5 min. or until vegetables are tender, stirring occasionally. Remove from heat; set aside. BEAT eggs, dressing and milk in medium bowl with wire whisk until well blended. Stir in vegetable mixture and cheese; pour into pie shell. Place pie shell on baking sheet. BAKE on baking sheet 40 to 45 min. or until center of quiche is set and top is golden brown. Let stand 10 min. before cutting into slices to serve.
