Is there any nutritional difference between frozen and fresh vegetables?
I'm always having to throw away vegetables, so I'm wondering if I stick with frozen ones do I lose any nutritional value.

- depends on how quickly they have been frozen and how but like they say about baby food breast is best and for veg its fresh is best

- Yes, there is a loss of nutrition. Minerals aren't usually lost in freezing, but vitamins (which are organic) are less stable. Vitamin C, for instance, is easily destroyed (by cooking as well as freezing). Vitamin A less so. So carrots (high in vitamin A) will lose less nutrition in freezing than peppers (high in vitamin C). Broccoli is high in both of these as well as some minerals (calcium, iron). Frozen foods (not just vegetables) lose less nutritional value if you cook them minimally and freeze quickly. Leftovers that are frozen will lose more nutrition. But the main consideration is *which* nutrients will survive freezing.
